Every body knows ham as the real typical Spanish dish; however, the difficulties for cutting and conserve it makes most of times, this food not enough profited. Therefore, in our store at Ayala street in La Paz marketplace, we will give lessons during every Sunday morning for all those people that want to get the best of their ham pieces.


Knowing how to get the best from dry slices, where and which temperature we should set to preserve it or how to slice ham will be some of the tricks that students could learn in only a morning time.

Besides the assistant will have the chance to practice what they just learned, cutting by themselves a whole piece of ham by both sides using an specialized ham cutting knife. The lessons will be not only directed on perception senses, will also be directed to safety.

A very thin slice, almost transparent, is the best way to delight one of the organoleptic conditions of this meal, like the smell, texture and taste. Even when the cut depends on the owner preferences, specialist recommends slice´s width should be thin as it could vanish in the mouth without masticate. It means, the advised width should be the same of the piece it self and advised length around 3 or 4 cms.

During the course we´ll learn different ways to cut ham depending on area we´re slicing, like cube shaped named “tacos”, which it’s a good way to get the best from the nerve area.

The final result of a good ham slicing depends most on precision cut, and the fact of cutting it in a wrong way could represent the lost of it most precious conditions, even when is a high quality piece. If slice cut we´re practicing is too thick it could give our piece an unwished texture like rubber or cork, in some cases might give us the sensation of nervous zone taste.
